My wife does a version she calls a “grown up grilled cheese” with a couple types of fancy pants cheese…usually gruyere and white cheddar…that she runs through a shredder and combines with some other stuff like a spread she makes with mayo, dijon mustard and parmesan cheese before putting the shredded cheeses onto the bread, and then into the panini press.
And tomato bisque instead of soup, but yeah…have to have that. And a glass of ice-cold milk!
Kicker is the crispy bacon slices she throws in there too!
