Traditionally "stars and bars" is slang for the confederate flag, not the US flag. I think he was referring to that fact more so than being offended by calling the US flag by some other name.

Learn something new everyday... we always said it in my platoon because we felt like the military owned our ass (and they did.. haha). Sorta like being in jail... Thanks for enlightening me on this topic.
