About the best AK mount around for use with the side rail attachment is the K-var KV-04S mount seen here:

They are arguably the finest mounts around and certainly a helluva lot better than some of the cheap airsoft and similar crap. Also, the K-Var mount places the optic correctly over the centerline of the bore instead of offset to the left like many other mounts do.

Same for the BP-02 mounts. They are well-made, center the optic over the bore, and come in a couple different heights depending on whether you want/need to have your irons accessible/visible while your scope is mounted. The first is the "low" mount which gets the scope very low/close to the cover but obscures the irons while the second is the higher model that allows use of the irons, but may screw with your cheek weld. I prefer the low mount personally.

I know that you can't remove the dust cover with the low mounts installed because the bottom of the mount basically sets within a few mm of the cover. On the higher mounts...it may be possible. Since they are return-to-zero mounts...it really isn't a big deal to yank the mount off for field stripping/cleaning and then reinstall it when you are done.

The most recent UTG side mounts are dead center and low, but not too low to remove the dust cover. I have two of them on an x39 AK and a Saiga 308. Work perfectly. Never have to rezero after cleaning, just slide the cover and bolt right off.

However ... and there's always a 'however' ... the eye relief on most 1-4x optics require either a NATO length stock or a BP-02 mount to get the optic far enough in front of your Mk 1 Eyeball.
