eh, temperature control thingys with wires and whatnot? Whassat?
I just dump in the charcoal, get it nice and hot, then add the wood to start smoking. "Thermoters, We don' need no steenking Thermometers!" Of course it did take a few times of upping the charcoal to get to where I knew it was 'all good'

To avoid the creosote, keep the top vent wide open to keep the smoking ciculating and out. When th smoke just hands around the meat, it cools and soots the meat. Control you heat with your damper control on the firebox.

Lump mesquite charcoal, you can't beat it! Modern technology has nothing in tried and true. To get a good sear you need heat and when you flip your meat let it flame up and burn it, it seals the flavor and moisture in it.

well just like rifles thisis getting out of hand !!!! but in a good way
Bought the smoker , just trashed the Gas grill with the junk man and picked up a Big Green Egg
Building the table for the EGG now.
between the EGG and the smoker can just about feed any party here having over 50 people for a test pig roast
