I would recommend Exodus by Leon Uris. It explains a lot you are questioning and gives a history from the Jewish perspective of how things went down. I am not Jewish, but read the book in my early 20s to maybe get some kind of understanding of the region. Pretty good book.

A few points, from a non-religious person who cares a lot about this issue:

1- There really is never any call for a non believer to mock believers for their belief. It is shoddy and ugly.
2- People want to make this issue all about religion. It is not. It is partly about religion but mostly about all of the other factors.
3- Nobody thinks comments about sky goblins and God not being there are convincing. They weren't even convincing when you were smoking dope in the dorms.
4- All three of these religions believe in the same God. The arguments start from there. A lot of times those initial similarities are what make everything end up so badly.

The first time we all went out on liberty I argued with them about it, but pretty soon several of the people we were doing JTOPS with told stories about their family members who were killed/murdered, and I didn't understand what it is like to be surrounded by enemies all the time.

Right about now, when the Israeli Arabs are rioting and trying to murder Jews, not arming them seems pretty wise...just sayin'. We have our own shit to worry about now.
