I've recently been getting more into the precision side of things and, after watching a bunch of videos here, it appears I need to be able to get real world weather info and not off a weather app.

Is there an entry level Kestrel(s) I should be watching for in the classifieds. I figure I'll hold off on buying the Cadillac model until I figure out how far down this rabbit hole I want to go.

Cool, I'll give him a shout. After buying a rifle, scope, mount, bullets, brass, powder, primers etc I'm kind of licking my financial wounds right now. The precision stuff is the last niche of the hobby that I haven't been neck deep in yet.
 
If you want cheap but effective, try a phone app {I used Strelok pro) with an $80 weather meter. Not as convenient as a Kestrel but it will give you for real dope for just under a hundred bucks.

OK, finally tried it out. I had an older iPhone that was giving me trouble connecting everything until I did the OS update. After the update everything works great! The weather flow app is easy to use and it integrates very easily with strelok pro.

tagging in with a question. I have never used a weater meter and ballistic app. It seems a crucial element to be able to true your data, is this an option on the weather meter + strelok set up?

Yes, it is called "Trajectory validation" in the app, on Android it is the bottom right icon that has a single bullseye and an up/down arrow.
