How do most of y'all set the trigger mode when shooting a bolt gun? I have mine set on trigger mode like the instructions say. Never tried it on doppler mode.

You have it set correctly, in trigger mode the internal microphones will listen for the rifles report and pick up the bullet.
I have used the Doppler setting to pick up 22 rimfire rifle rounds that were too quiet for the trigger mode and it worked very well.

I use doppler when shooting suppressed, trigger on non suppressed

When I use my LabRadar, I normally use the little Microphone that comes with it. Even with my Uber Quiet Air rifles it pics it up every time. If it is picking up others on the range, I just turn down sensitivity a bit. Works great. For me the Doppler was too inconsistent and sometimes missed close readings.
