I can't speak for Sgt., but for most it's the finishing touches. People buy Baers because they flat out drive tacks. Some models are geared toward comps. like the heavy monolith(solid extended dustcover). All come std. guaranteed 3" group at 50 yrds, but for an extra $150, they'll guarantee 1 1/2" group at 50 yrds. They also are just plain jane 1911's. Blued, Chromed, T-Chromed, Stainless. They mill all their own parts from forgings I believe. There may be 1 part that Les Baer didn't make themselves. Les also builds them HIS way. You won't get him to budge much for any deviation from the way HE builds 'em.
<span style="font-weight: bold">Wilson Combat</span> puts the finer finishing touches like flush reverse crown bbl, ball end cuts, beveled slide stop hole, firing pin stop checkering, slide stop checkering, top of slide lines/checkering, etc., etc. On top of that, they have some finishes that are fantastic to look at, and many owners probably display/fondle more than shoot. Wilson makes most if not all of their parts too, just flashier or fancier or more refined with TONS of options. Wilson will build more to your specs.
Can't speak for <span style="font-weight: bold">Ed Brown</span>, not familiar but they are great as well.
<span style="font-weight: bold">Nighthawk</span> is basically Wilson Combat in a different form. Bill's ex-wife and probably some of Bill's ex-staff, and they make one heck of a 1911 as well.
I would be hard pressed to elevate one of these over another. It comes down to what do you want your semi-custom/custom 1911 to look like. All will shoot better than just about any shooter out there. Most will have 4-6 month wait times, unless you buy from someone's inventory.
