Ha, upper left is a bag of brown rice. Sometimes I make a little brown or wild rice to go with dinner. I'm not eliminating carbs cause of Dr. Atkins, but more so cause I'm diabetic and want to stay alive without issues.

Besides, I still manage to eat plenty of great food, just takes a little more planning and such to make it happen. Along with being at a job where I don't just sit at a desk all day the weight drops off almost effortlessly. Over the last 2 years I'm down almost 100 pounds. The first 60 fell off within the first 8 months or so, then I slacked and didn't eat very well for a while, but as of semi recent back to trying to eat better and the weight is dropping again. On average about 2 or 3 pounds a week, way more than my doc says to lose but I can't help it. I still eat plenty and and consume lots of calories.

Well before Atkins there was this guy on PBS who used to lecture about how the body uses different foods in different ways, and about the effects of aerobic exercise vs anaerobic exercise.

He was always entertaining and informative.

Can't remember his name.

Bought the meat at the store last night, it comes wrapped in paper instead of just thrown into a paper bag.

That is the last unopened bag of Kona Peaberry I have. Finished off one this morning, will be opening that particular one tomorrow morning.

JD is one of my favorite marinade type items for meat. I have had that bottle for about 2 years and you can see how little I use.

I still don't get what's the point of having the gun and knife in the picture. Especially since the meat is store bought.

Never had Bulleit freeze like that, must be the water content, or in the case of the Bulleit the lack thereof. Shoot, not even Jim Beam Black does that.

On that peaberry, Press? Only way to go with good beans. Grind them fresh, nicely ground to a medium/fine grind so they stay under the screen. Three good measures(3 Measures coffee:16oz Water)per pint. When the water is hot(190*) dump only a 1/2 cup on the grinds. Let it sit for one minute(brings water to 185*), then pour the rest of the water over the grinds and let steep for three minutes to five minutes after mixing with a spoon to bring up the crema, press and pour. It really brings out the flavor of a great bean

JD makes me sick to drink because of an incident between a buddy of mine in 10th grp in 1984 - can't touch it but damn I can cook with it!!!!

Lunch was actually quite awesome. Burnt it was not, just had a little singe on it. It fortunatly came out just the way I like it, with a little pink in the middle. Cooking steak to that point is an artform I can't master and was basically luck this time.

As for the gun in the pic, its semi a joke among myself and friends I shared the pic with. Obviously not meant to give the impression the cow was killed with it. If one must know the truth I believe old man Wimsatt still uses a .22 at close range. I wasn't home when he butchered this one a couple months ago.

Same for the knife and JD, just some of the pseudo requirements for a proper food pic. I do use my pocket knife to cut the meat when lunch comes around simply cause its the sharpest knife in our kitchen at work.

I'm not much of a drinker at all and never cared too much for JD. My liquor cabinet of sorts might appear to tell differently cause its pretty full with much variety. I have had the good ol mixture of JD with coke and variants and its ok. Not something I'd really enjoy like some folks. If I for some reason have the rare urge for a drink my preference is a white russian. But again, I probably drink less than a handfull of times a year, and of those times I might be classified as drunk once. Just not my cup of tea and got all my bar time partying in years ago.

Atkins is rediculous but as previously mentioned I'm diabetic so I have to watch my carb intake. Best way for me to do that is with lots of dead animal and supplementing more and more with veggies and such. I don't eliminate carbs, just keep them at a minimum, a very minimum. I still love rice and some bread too much to give them up all together.

Ah, and its been a long weekend....

My mistake, had a huge brain fart. That steak was store bought. I didn't have anything thawed out so while I was at the store I bought that one to cook up that night.

The cow in the freezer currently was put in there a couple months ago. Two new replacements have been introduced to our pasture much at my son's delight. He has no issues with his pet cows turning into dinner. Surprisingly he is even fine watching the butcher do his thing, he just complains when the pasture is empty and he has no pet cows to feed.

And damn it, forgot to cover the coffee.

I grind to a fairly fine grind and make my cup every morning with an Aeropress. 3 scoops of beans, grind, add 3oz of 180 degree water, stir for about 10 seconds, press, then add about another 9oz of water. So far the Kona Peaberry hasn't super impressed me. Its good, and much better than anything I've bought at any coffee shop/shack, but I think I prefer the Kauai stuff over it. I wouldn't turn down a cup of Kona Peaberry at all but I don't prefer it over a couple others, plus it costs quite a bit more.

A friend had some countertops done at her house and apparently the guy doing them is a local roaster from Vancouver, WA. She got me some Kona from him to try out. Just need to drive up and pick it up from her this week.
