Measured my factory remington 700 .308 win rifle 2.350 to the rifling using hornady gauge.
Took the guage to my rock creek barrel and measured 2.159 of free bore in a palma 95 chamber.
I measured about 60 times trying to develop a consistent pressure/feel.

I have some left over ammo that I originally made for factory barrel that measures 2.225 to the ogive. Chambered it into the new barrel several times it was difficult to close the bolt but the OAL of the bullet did not changr after I chambered the round 5 times.
I have 30 of these rounds, should I use my seating die and shove the bullet further down to fit or pull them apart and start over?

Also for 175SMK what seating distance would you reccomend off the rifling?
Thanks.

Federal Gold Medal Match .308, pretty much considered the standard for premium factory ammo, uses the 175gr SMK and is seated to a 2.810 COAL. That should get you started, adjust depth as necessary for best performance :)

You need to pull them and start over. Work up a new load in the new barrel, don't shoot handloads that you originally worked up in the factory barrel in your new barrel. Most custom barrels are going to be a bit tighter and have a tighter chamber than a factory barrel which means you'll have higher pressures with less powder. A load worked up for a factory barrel might well be too hot for your new barrel.

I would start at .010" off the lands and go from there, working up a completely new load.

Your brass may not fit the chamber either, If you fired it in your factory chamber then minimally bumped the shoulder back say .002. I had this issue when I had a factory rem 700 .308 rebarreled. I had to re size like 600 pieces of brass. If you do have to do this it's not a huge deal. Remove the decapper from your sizing die, lube only the outsides of the cases do not use spray lube (don't get lube inside since you can't tumble with primers in) size the wipe the lube off by hand.
