Would zero stop turrets be good feature to have with NSX 2.5-10x32? Scope would be mounted on 16" barrel AR.

Will be shooting at steel plates at least as far as 600 yards if that matters.

Does this scope have a diopter adjustment?

Yes. The Compact NXS turrets have no turn indicator. So if you get out to 600 yards you can be out a couple turns and it's easy to forget. The scope also has a diopter adjustment for focusing the reticle.

While I agree with the above answer ( I bought my first NXS/R2 combo with zero stops not realizing its a "set it and forget it" system ), the design and intended use of the R2 Reticle negates the use of zero stop turrets. The R2 reticle is designed to rapidly engage targets using hold over hash marks on the reticle. (once you are zeroed @ 200 yds).
