I shoot 250gr bullets in my 338LM and have used a couple of pounds each, of VV-165 and VV-170 with excellent results. The N-560 and N-570 will give you a bit more energy, if you really need the speed.
For 308s, I've just stuck with VV-140 and VV-150, but I do have a half pound of VV-N-550 here, somewhere.
I can only shoot out to 1000 yds, so I don't need to scream at 3000+ fps..
Try a pound of VV-165 and VV-170 and see what you see. Try VV-140 and VV-150, as well, in your 308. Can't say what's more accurate in your rifles, however.
