Okay, so I got my zero pretty much where I want it. What are the implications if I adjust zero stop now, and then re-zero for another cartridge later? Am I eating up the adjustability in this fashion? What is the process to "undue" a zero to get it back to factory centered?

Your useable UP in a scope is contrained by the geometry of your action, rail and rings relative to your bore's axis.

The 'zero stop' just prevents you from turning down past wherever your zero is set. It doesn't chew up any elevation, the way the things above do.

You'll be changing zero if you're shooting different combos of ammo, especially if the POI shit is great, as it can be with varying bullet weights and mild or hot loads.

Consult your manual for setting your zero stop. On my SB, it's built in plus 4 clicks. I basically loosen the elevation turret, pull it up 1/8" and lock it there, this gives me access to the full range of clicks and I'll set the knob to 0 and loosen, reset and lock back down the turret.

Zero is now set and will need to be reset as the cartridge or ammo combo changes.
