I'm wanting to get a Remington 700 SPS Tactical. The deciding factor though is do I want a threaded barrel with 1 in 10" twist or a non-threaded barrel with a 1 in 12" twist. I really like the potential for accuracy with the 1 in 10" but don't know what bullet weight would be appropriate for that kind of rotation.

Would shooting a heavier bullet carry the risk of shooting out the barrel?

Nah, heavier bullet isn't any harder on barrel. Good chance it is better for barrel life. Depends on theory you run with but in my experience, heavy is easier on barrel.
12 twist you kinda top out in the 190-200 range for reliable performance at 1K at all temps & altitudes (air density). 10 twist won't hurt you any on the light end and will help on the big end.

The beauty of it is that it is 308, you can usually get the factory sps to shoot really well with almost any type of bullet especially if your shooting steel, just don't expect to consistently be shooting 1 hole benchrest groups with it. Most of the time its the shooter not really the rifle so you should be fine with either 1:10 or 1:12. I would personally get the 1:10 threaded so I can use a can or muzzle break.
