Gunsmithing Recrown when getting a brake installed?

I have no gunsmith edjamacation but want to get a thread-on brake installed on a rifle I have. When they cut the threads on the barrel do they typically recut the crown as well? If a thread protector is made, does it match the crown, replace it, what?

Does the crown even matter as much on a rifle with a brake as it does on a non-brake rifle?

Yes, the crown is important even with a brake. I would guess that most smith's would re-touch the crown when they installed the brake, that's the only way I would want it done or would do it. When you get the bore indicated in for the threads, it is a great time to take even a light cut. The thread protector should be built to either protect the crown, or blend nicely with it.
