I have AICS .223 mags that I'm going to use with a new rifle build. The action is a Rem 700 in .223 that I've got on lay away. So I go to my local store and see that Remington uses some sort of spacer in the mag well to shorten up the space available for the ammo. Since I can't take apart a display rifle, my question is this.

What do I have to do to make these AICS 223 mags I own work with the Remington 700 action, other than buying the appropriate bottom metal? Does that spacer just slide out as necessary?

You don't need anything but the appropriate bottom metal. The mags fit and work correctly. The spacer is just to keep the function of the bdl set up with the oal difference. You'll be good to go and it'll be quite sweet.
