I used the search function and found some close info but nothing specific. Are Remington 700 SA .308 bolts interchangeable or will some type of gunsmithing be required? Additionally, what is the utility in fluting a bolt? Is it cosmetic and akin to chrome plating a mess kit or does it serve some functional purpose? Thanks!
 
The jeweled bolt from my VLS and my ADL varmint(both in .308) are interchangeable when it comes to head space. I don't really see the point of fluting a bolt. The AW Arctic rifle has a fluted bolt to dispense of ice that may build up but I've never had that problem so I won't use a fluted bolt.

Some bolts may interchange and headspace and some may not. A set of "Go" and "No Go" for your 308 is the best way to determine the safety of swapping bolts.

Fluting is primarily cosmetic and a case could be made for a slight weight savings if building a lightweight hunting rifle. I do like the looks of the fluting and certainly can understand why a shooter would opt for it.
