Headspace is the very critical lenght of your chamber. It is measured from the back of the bolt to the front your chamber. Mind you that when you touch a .308 win off your dealing with roughly 54,000 PSI of presure. If it is not set on a rifle, you can jack those presures sky high. On a 700 you have a couple of components that effect your headspacing.The lenght of your threads on your barrel, the depth of your threads in your reciever, the thickness of your recoil lug, the depth of your bolt face and the most important the depth of the chamber in your barrel. Also keep in mind, the difference between a good chamber and a bad chamber, is about .008 thousandth of an inch.
I would strongly recomend let a competent gunsmith check it out or put it together for you.
