Rifle Scopes Resetting Steiner Turrets?

I have a Steiner 4-16x50 Military G2. Took it to the range for the first time today and all I can say is WOW!! I was amazed at how well I could see, well after sunset. It was so impressive, I imagine that I could shoot on moonlit nights, no problem.

Mine was used and came to me without a manual. I've looked online and while I've found some information, I'm not sure I understand.

1) I'm totally maxed out in Left Windage and still need another mil to get on target.

2) I had to come up 7 mils for a 100 yard zero.

My rifle is a Rem 700 in 6.5 CM with a 20 MOA EGW base.

I see that there is two set screws on the turrets. How exactly do you reset the turrets. Pics would rock. As a matter of fact:

For your windage: loosen the 2 set screws (half turn only), turn the turret 1 mil past 0, push down on the turret while tightening the set screws, turn the turret to 0, fire for effect, adjust as needed to zero, loosen the 2 set screws (half turn only), turn the turret to 0, push down on the turret while tighten the 2 set screws, should now be set

For your elevation: loosen the 2 set screws (half turn only), turn the turret to 0, push down on the turrets while tightening the 2 set screws, should now be set.
