So am using Seekins med .87 rings and have around a 1/4" or so of room between scope bell and barrel. Should be more than enough room left should I switch to the low .82 rings.

Realize that its a minor height difference so should I switch to the lower rings?

.25 of clearance is good, this way you can fit a scope coat or butler cap over if needed. It is always best to get the scope as close as you can , but between .25 and a few sheets of paper, I would go .25 Just use a Triad stock pack and you will be good to go. Steve sells inserts for adjusting comb height, or you can use an ordinary mouse pad under your pack.

The most important thing is to have the cheek comb at the correct level for a perfect NPA (natural point of aim)

I just got my XLR and the scope sits approx 1.25" above the bore, now thats up there.

Do you have an adjustable cheek piece? If you do, it doesnt matter much. .200 or .250 under the objective bell is not much difference.
If you dont have an adjustable cheek piece it matters more. Sure way to tell is to close your eyes and shoulder the rifle and get your cheek where it needs to be on the stock. Without moving your head, open your eyes. Are you lined up with the scope? Are you too high or too low? That will determine what you need to do.
You do the same with your shotgun or bow to check fit with your eyes closed.
