Open foam will absorb water...not good.
Closed foam will not absorb water...<span style="text-decoration: line-through">good</span> better, not perfect.

All foam will eventually lead to rust, as long as nothing else is done to prevent it. Some foams are not as bad, closed cell is better.

All foams will also absorb oil, which may not be ideal, either.

Gun cases are great for transporting guns. As storage containers, they suck.

Rust should be a non issue as you shouldn't store any weapon in the case anyways.

Either will work for protection. Been using the same open foam in my Starlight case for about 10 years and never had anything rust.

From a "feel" point of view, open cell foam is more "rubbery", whereas closed cell foam is a little harder. I've used both in Pelican cases for air travel with a long gun and I much prefer the open cell foam because I feel like it has the better ability to dampen shock. That's JMO, so YMMV.
