I am going to put a vortex golden eagle on my new ftr build. Just wondering- do I really need a spuhr or recknagel to maintain a consistent zero? Will vortex rings do the job on a 308 rifle?

any quality pair of rings will do fine
a 308 isnt a high recoil cartridge
there are so many good rings on market it comes down to what looks "good" more than anything else
i happen to like one piece mounts but thats me

That sort of cantilever mount is more appropriate on an AR. Assuming you're mounting your golden eagle on a bolt action rifle, I would suggest a Badger unimount:

Brownells sells them for @ $194.00 here. The one you want is probably either model 30696 or 30697.

Put it in a set of the Seekins/Vortex Precision Matched rings and you will be fine. Those one piece mounts are high and you shouldn't need it that high on a bolt gun. A good set of rings will hold the scope fine.

I would go probably with the vortex precision match rings. In case of a Golden Eagle (15-60x52), which height would you choose? .87/.97/1.26? I am wondering as to whether .87 would not be too low...any idea?

btw, hawkins could be a great option, but is unavailable in the EU.

Go with the .97” height. You might get away with the .87” but depending on the rifle the .97” would be the safe bet.
