Will using steel case ammo damage the extractor over time?

Obviously steel on steel will wear faster than steel on brass, but as far as I know it’s minuscule... Not that I’ve ever heard.
Yeah don't sweat it. The steel used in cases is softer and won't cause any excessive wear. If you are doing it to save money then you will probably save more than a new extractor would cost over the time using the steel case.
