I’m really interested to see how it turns out if you do. The first thing I did when I saw your comment was was to try and picture how one could get a similar look. I believe that it can be done. At least the look if not the incredible detail that nature provides.Im not artistic enough to make it happen.

Involves at leas 12 hours of low heat and smoke from mesquite, hickory, or even peach wood. Ask @Ronws
I will admit Smithfield is big in VA, but I dont eat pork so I get a pass on that.You hail From Virginia… where overcooked salted-to-death ham fit only to be chopped into soup is considered the state food!

PS. OK does have wicked good BBQ. Never was a brisket guy myself. Unless it’s kosher deli type on rye with Kraut and Russian dressing. Texans love their brisket… I never had a thing for it. KC BBQ… ummmm. Good stuff too!!!
