got my bighorn SR3 action in a couple days ago. I removed the bolt and shoved it back in which cocked and set the firing pin. Question how do I uncock it without mounting the trigger.. not sure if I should mount the trigger with it cocked

You pushed the bolt in and turned the handle down, without a trigger installed, and it is still cocked?
 
If the bolt is fully assembled and in the action with the bolt handle down, then simply lift the bolt handle and remove the bolt. Install the trigger, then put the bolt assembly back in the action.

Your original post seems to be lacking correct terminology.
