If the safety is not engaging, look on the SIDES of the rear of the trigger itself, sometimes the cutout on the safety itself is too narrow to allow the sides of the trigger to slip past (inside) that cutout or ears of the safety. I believe it mentions this in the directions for the trigger...

Well, not the one I did. That said, it was the professional model, not pro hunter, but to me the actions look the same. The one I barreled had the hard plastic stock that was fairly flimsy, but it shot well.
If the smith can cut metric threads, they should be able to rebarrel it. I did one maybe 5 years ago, professional hunter in 25-06 with a Rock bbl. I hear back from that customer every now and then and supposedly it shoots great and he loves it. I do remember an odd tennon on the barrel...
Another option, and one that will only improve accuracy is to face the receiver a few thou. It will give a good 90 degree square surface for the barrel extension AND it will allow you to torque the barrel nut on to the proper index without popping a nut in the process.
I'd probably stop dicking around and just open the gas port .002-.005" and be done with it. Adjust the gas system so STANDARD parts work with it. Standard rifle length buffer, standard spring, etc. The side charging handle's mass more than likely gave you the issue, adjust the gas port...
You ever measure the run-out on most OEM extensions? Not that it really matters too much in this operation. Average .005-.012". BAT manufactured ones have always been under .001". This is barrel blank through the headstock for threading and chambering.
Here's one of mine....built it short notice last year after talking about an extreme range shooter. Stiller 408 Tac single shot action, 30" Rock barrel, bottom safety Jewel, ATACR scope, Joel Russo A5L stock that he just profiled short notice and sent to me un-inlet. From inception to finish...
