Need a little advice. Price difference is negligible. Also weight difference is negligible.

This being the case, what are other benefits of the fluted barrel?

Also, can AI or other aftermarket bottom metal and magazines be used? If so, is it best to purchase the DBM or floor plate if I want to move to aftermarket mags?

Jeff @ CDI does a nice DBM bottom metal for one that takes AICS mags. If you were to go that route, it wouldn't matter which factory setup you got because the stock would be getting inlaid again. If you don't do that, I'd say go with the floor plate... and no flutes. The factory DBM sucks and flutes are a gimmick for looks only (unless you like the looks, then get them).
