We do it the opposite from head down, on run of the mill meat deer. If it's good enough to mount then it's done by hand in the direction you're doing it.
Chain or heavy rope around the neck, split the chest hide, ring the neck, slip an apple sized rock under the nap of the neck and cinch up the pulling rope/cable around the hide and rock.
We've used everything from a four wheeler, to a Ford 8N, to a pick-up....fast, works great.
I have done it that way quite a bit but you have to be careful you don't rip your deer in 1/2. See a few guys do that before when pulling too hard or didn't have the deer prepped properly.
ive seen ppl attach is to like a tree, then the bumper of a truck and just throw it in reverse. skinned the animal in like 15 seconds.
ive never done it, i always just use a knife but id sure like to try this. howd you attach the winch to the skin? i think ive seen it done where you wrap a flap of skin around a rock, then wrap the winch line around the bulge in the skin that the rock made.

I have found a bigger sized washer or a golf ball both work good. I don't know about the golf ball but most of us rednecks usually have a washer or two laying in the tool box.
I hang from the head. Skin around the neck and down just far enough to get my tennis ball rolled into the skin. Down the front legs a little ways. Rope around the tennis ball rolled in skin. Usually hanging from the front end loader on the John Deere. Tie the rope to the bumper of the pick up and back up the tractor or pull forward with the pick up. Skin falls off.

I use a tow strap around the neck hooked on the bucket of a tractor. Then cut the hide around the neck and tie a rope around a ball (tennis, golf, ect).
Put the bucket and deer on the ground next to a corner post.
Tie the rope to the post.
Raise the bucket.
Deer goes up, hide stays at the base of the post.
