I loaded up some berger 185 juggernauts to do an OCW test in my .308 with Varget (I don't have any 2000-mr but have been searching locally before anyone tells me I need to try it). I shot everything through my magnetospeed to see what kind of velocities I was getting. I don't have a picture but here are the charges and velocities:

44.9 was the worst group and the rest were good impacting the same point in relation to the bullseye. Based on the velocities I planned to load 3-5 rounds each from 44.0 to 44.3 in .1 grain increments and see that they have the same POI and the velocities stay tight. Is that a waste or should I just roll with 44.1 at various seating depths?

I'd roll with 44.1. I've spent a lot of time and money trying to find a "perfect" load and I think many other people would agree. You can load them in .1 increments for self reassurance and see what runs best so you don't have to ask yourself the "what if" but I think those numbers look good. Varget is a really good powder I just wish I could find it when I need it.
