As long as the side folder is from a 181-series or higher, it should be doable. A stock from a 180-series would not work with current production rifles.
I'm pretty sure the GB variant had the thicker barrel- but whether the barrel contour and gas block are identical to the new crop of heavier barrel Mini's- not sure.
Some of those original sidefolder stocks are selling for as much as the rifles...

Barrel on newer Mini's is heavier only forward of the gas block. (Same goes for their heavy-barrel target model.)
The receiver on newer Mini's is a hair wider, but not enough to prevent stocks from 181-series and higher from working.
