I really feel like a farm nerd right now...but...
That is a specific breed of eggplant, a white breed. The black ones start black. Eggplant doesn't "ripen". They can be picked and eaten at any age. The young ones are best. The ones in the grocery store have been on the vine WAY too long, and are a big reason more people don't like eggplant.
