Thats about what I read... It was cook to 180, wrap in foil and cook to about 205, then remove and let it sit for about an hour. I'm shooting for moist that doesn't dry out 20 minutes after it's pulled apart.For whomever was asking above. I cook pork shoulder/Boston Butt on a smoker to 195 internal, take it off, wrap in foil for an hour and pull it. Takes that temperature and time to break down the fascia/connecting tissue, so it will pull. Works for me.
