add fried fish roe, fried mullet, collards, divinity, cornbread, cornbread with milk, boiled peanuts, Krispy Kreme, oyster dressing, pecan pie, pecan pralines, coke with peanuts, pickled eggs, pork rinds, fried pickles ... fuck, I'm just getting started

I think that's head cheese in southern and yes. My grandma made some of the best as well as red boudin.

Souse meat sounds like what a Brit might call blood and tongue.

33, but still have one or more of ‘em at least once per week, even after moving to Tejas.

Missin’ a whole bunch’a pork products, and fried delicacies though…shrimp, hush puppies, etc. Pretty much anything and everything fried.

Plus corn bread, etc too.…. And smoked/fried/grilled river fish of all varieties! Catfish and mullet were staples growing up in my house; cheap and plentiful.
