Working on prepping some new Winchester brass. The length is all under the trim length but they do very. Should I trim them all to match the shortest?

It wont matter. Just load it and shoot it. Get back home and set the shoulder back

I just run em up to kiss the expander to bring the mouths back to round, Some other folks full length resize them. It's up to you.
As they are new, I figure the only thing out of spec. are the dented mouths. Thus I only fix what is broken!

+ 1 for all of the above.
I don't worry about trimming until I've fired new brass in my rifle at least once, then trim to the shortest if for precision work. If for general shooting, just trim the longest to minimize variables somewhat.
After running thru an expander to round out any dents, you may want to lightly inside chamfer the necks just to make sure bullets get seated cleanly.

Don't trim them if they are in spec. unless you are crimping, then I would trim them to the same length.
