When it comes to rifling, what are the advantages of more vs less? If more were better in every way then we would have more in all of them.

OP, twist rate is more critical
more rifling means more grooves, which means less bearing surface on the bullet itself, and would be easier to wear. then the grooves would also become tougher to clean and easier to foul up because they are thinner.

Maybe the OP meant "descent"? Like in a down-sloping shot?
As for rifling, by "more vs less", are you wondering about rifling Twist? Or the number of rifling features in the bore, (lands/grooves)?
