I want to have a smith mount a Surefire Muzzlebreak for me. Which model should I use?...And would it hurt to have the barrel shortened some?

I think the big question is do you plan to run a surefire suppressor in the future? I am going to run the 762ss suppressor on my .300wm, so I will be running the mount that reflexes over the barrel.
