So my friend managed to bag this yesterday out on Fort Rich-

We went out there and butchered it in about an hour or so, easiest moose we'll probably ever get considering she dropped 30 yards from the range road. Pretty cool draw hunt.

So anyways, after a bit of a makeout session-

and my buddy said he didn't want it. So now I have a tongue.
Any of you guys have some good recipes for moose tongue? One of the ladies I am currently pursuing is this bizarro vegetarian (the only meat she eats is wild game and such), so I was thinking it may be a splendid idea to have her over for some tongue.

I've only ever had the boiled, skinned, and sandwiched variety, I was hoping for either a crockpot or roast recipe. And yeah, google's got a ton of stuff on it, but I figure with guys like 45/308 and KraigWY, it's worth shaking the SH tree.

We've always boiled/pressure cooked them too. If we didn't sandwich it, we'd still skin it.

Cut it into cubes, 1/2" or better in size.

Make you a good tomato gravy, season to your taste, and drop the cubes in and slowly simmer for 15 minutes or so.

Cook you up some potatoes and fresh mash them. None of that whipped shit either, proper heavy ass mash. That way it doesn't turn into tomato soup when you dump the tongue/gravy over them.

We like biscuits in the south, so we'd cook up some 'popeye type biscuits' to serve on the side.

2 cups of bisquik powder, 1/2 cup sour cream and 1/2 cup of 7up and 1/4cup of melted butter. mix 'em up and should make eight biscuits or so. Cooked about 12-15 minutes at 450 deg F on a greased cookie sheet.

I've had folks over that wouldn't eat tongue on a bet and have devoured seconds before they bothered to ask what it was!

No we don't have moose down here, but we cook a shitload of beef and pork tongues!

never moose but with beef boil it skin it and shreaded it. makes GREAT tacos.

They're pretty badass....called 7up biscuits. but they taste and look alot like what popeye's sells.

I like skogs idea too.........get a little tongue in her taco??? that's kinda the idea anyway, idn't it?

lengua tacos! simmer in enough water to cover for 3 hours with onion, oregano, bay leaf, and garlic. turn over once. cut off the inedible stuff and either cube or slice (0.25"). season with salt and pepper. heat a couple of tb of oil in a skillet and cook just until the tongue browns up. serve with whatever you like.

Put tongue in trash can
Close lid
Carry to street for pick-up

All joke's aside, that does not sound inviting at all.

My recipe:

take the tongue, cut into fine 1/8th inch strips
Take one half bottle of whiskey (your choice) and pour over strips.
Place in fridge overnight (for at least 12h)
Take out and dump in trash
Drink the rest of the whiskey

I can't remember when I've had better tongue, with this recipe can't remember much of anything....

laugh it up beepy and tansinator. you guys are missing out on one helluva fine cut of meat. If'n you ever get into some done right, you'll throw rocks at regular dried out roast crap.


Or, leave them alone and those of us who know will enjoy them even more.

an open mind is a wonderful thing to have when it comes to wild game. I had never tried moose heart before because everybody who hunted in the fam back in the lower 48 always aimed for the damn thing and ruined all the organ meat. After a few episodes up here with my backwoods friends who grew up Poor as hell, I learned that the thing my picky relatives always overlooked was the most delicious part of the animal. besides, tossing good meat away never sat right with me. at least let your kids/dogs eat it.

How about Pickled Tongue??

1 pt vinegar
2 T sugar
1 tsp whole allspice
1/2 tsp mustand seed
1 pt. water
1 tsp whole cloves
1 tsp whole black petter
1/2 tsp salt

Wash tongue in salted water then put it in fresh water. Ass 1 tsp allspice and simmer 1-2 hours or until tender. Cool, skin and cut off roots. Submerge in pickling solution made from the above that has been boiled for 10 min. Refrigerate and age for one week.

pickled tongue is amazing just FYI.

My FIL also does alot of pickled heart and canned hearts if we get a few deer at once but to keep this on track - the absolute best tongue dish i've ever had was tacos de lengua at Molcasalsa on north rancho dr in vegas near the pawn shop. I befriended the owner of the place and we had a discussion one day about the core methods of mexican cooking and thought he would not give me full recipes he was very proud of the food they put out and their lengua and cabeza tacos were just incredible. I could never bring myself to eat that God awful tripe soup hangover cure though...menudo is disgusting.
slow simmer, with a whole head of garlic, a few red onions, peppercorns, bay leaves, coriander and a handful of cilantro, and a good hit of dried chiles (ancho and guajillo) and let the tongue simmer for 3 hours. remove, skin, cube, reduce the simering liquid. strain, keeping the liquid, toss the onions and seasonings, and then a good stiff shot of their marinade from the carne asada. simmer another 20 mins or so and get it in the warming trays for service. served on fresh flour tortillas gringo style or street tacos with a double corn tortilla with a shot of cilantro onion mix and a squeeze of lime...ohmigod i'm hungry now. I REALLY miss Vegas sometimes.

Im thinking the taco idea will be the way to go....
Here in AZ you can get the "lengua" tacos and they are tasty.

The 7-up biscuits were amazing with Moose Liver and Mashed Yams tonight.
Called her up, she's coming back to Anchortown tomorrow, so I'm gonna put some tongue in her taco on either monday or tuesday night.

So she really liked the tacos last night, I put the tongue in the crockpot on high around 0700L, skinned it after about four hours, threw the scraps back into the crockpot with some veggies to make a good broth, and took the meat, cubed it and put it in the fridge until about half an hour before she came over. then seasoned it with red robin seasoning, wrapped it in tin foil and threw it in the oven at 350 degrees for 30 minutes.

I really need to get more Moose, the tongue was amazingly tender and juicy, I could not believe how much flavor was in it.
