Re: Best hunting 7mm-08 bullet for 18" barrel I've shot 15 or 20 deer with factory Hornady 7mm-08 139gr SST ammunition. I have zero complaints about the bullet's performance. Only one of those deer didn't drop right in its tracks and that one made it less than 50 yards.

Re: Longest shot you've made with an AR-15 I built an AR with a 16" stainless Noveske barrel and a SWFA 1-4x24 The farthest I have actually shot it is 300 yards off a bipod and I shot nothing but 3-4" 10-shot groups using a variety of 69-77 grain ammo from Black Hills and COR-BON.
