Get the Sage DCSB and some low BO or NF rings and you're set. That mount with the scope mount you mentioned will be stupidly high. Keep it as low as possible, the DCSB and low rings should keep it just over the rear sight.
I have a Krieger 18.5" medium weight barrel on it. It does well out to 600 yards and surplus ammo, and pretty good to 800 yards with 168gr. match ammo.
If you trust them, Botach had them for $699 and free shipping. Cheap Sage stocks are hard to be found, if they come up, they're usually gone pretty fast.
I have an Eagle HSRC LE 44 in a Pelican 1720. With a soft case you have some wiggle room to work with if the case isn't exactly the same outside dimensions as the inside of the Pelican.

The Mod 0 weighs more than the ALCS/CV due to the steel rear end. The ALCS/CV uses an AR rear end and weighs about 1.5 pounds less (depending on the butt stock you choose).
I took off the rear sight on one rifle a while back, it only gained me about 1/8" lower, not enough to be worth it. With a Leupold 6.5-20X50 I ran BO .823" rings and just cleared the rear sight and hand guard. Most times you'll need anywhere between 1" to 1.75" of rise to get behind the scope...
A scout or 18/18.5" setup can get you out to 700m. I've shot mine out to 800+ with decent results. It's not a bolt action, so I don't expect those kind of results, but I can hit an 18X24 plate consistently even using surplus ammo. Seems like you know what you want and have fairly realistic...
