Is this overkill for deer, elk, etc.? Does anyone have experience with the brake? The second option I am looking at is a 300 WSM without a brake. This one seems a little more reasonable for the game size and ranges I will be working with.

Probably nothing past 300 on elk or deer, probably longer on pronghorn. I already handload so its just a matter of new dies.

Oh, well I'd pick something like a 7mm rem mag because it will be cheaper and easier to shoot.
