7lbs tenderloin I cooked for 3hrs sous-vide @ 130F, then roasted @500F for 20min. Was not a uniform thickness so the smaller end got more done, but some guests preferred that. Slices are ~.75" thick. Should have taken one of my knives over with me, my ex and daughter don't know how to take care of them. All tastes the same, though.

We had a Sgt Vucavich (sp) that filled that role.
Wow, no matter how you spell it, I haven't heard THAT name in 51 yrs. "Vuko" was in my platoon in basic. Squad leader, 4th, B-2-3. Ft. Ord, CA
This was '71-'73 during the Army's clusterfuck "VOLAR" experiment. Volunteer, professional army. Riggghht...mostly bangers from Chicago, NY, Jersey...judge says Jail or Army you choose.
If you were a good boy and kept your mouth shut and shoes shined, you could go home on weekends!
I'm from TX, how the hell am I gonna make it there and back to CA in two days. I stayed in the barracks, saved my $$, and loaned it out to them that don't have beer money for weekend leave. $10 for $20, $20 for $40. payable next time the eagle shits. NO refunds...you don't pay, Vuko gonna visit you.....all 6'8" 275lb of him. MY NAGGAR! I think he only had to visit 2 or 3 idiots in the whole 160 man company over the course of basic.

When you get old, it helps to have memories and pictures. I have a memory of Vuko, alas, no pix.
Thanks for bringing back the memory! Times were different, but man were they better IMO.
