Pretty normal for a scoped M1A to ding up the windage knob especially if it's a taller finger adjustable knob and not a hunting-style low profile capped knob.
A fresh set of USGI extractor & ejector springs can help lower the brass ejection path to about 2-3 o'clock but chances are a few pieces of brass are still going to ding the windage knob.
My LRB M25 occasionally leaves brass marks and dings on the bottom of the windage knob and it's just the nature of the beast being the scope is right over the bolt and ejection path. I suppose you could protect the knob by either putting thick clear heatshrink over it or building some sort of deflector that clamps to your scope rail or to the scope tube itself and protects the bottom of the windage knob. I've just learned to live with the marks.
