Trigger pull weight

What do you guys consider a practical trigger pull weight? I met a guy the other day that had a rebarreled rem 700 with a 2.5 ounce trigger. I don't see that being practical anywhere but in bench rest. What do yo consider optimal for a varmint gun?

2.5-3lbs for a rifle used in field or stressful competition conditions, and/or with gloved, cold, wet, or otherwise desensitized fingers. You want the pull to be deliberate, if only barely.
Managed to miss the end of your question, for varmints from a stationary set up without being frozen or gloved you could go a little lighter, I like mine at about 2.75 for everything, never feel like I'm off because of it.
