we make a homebrew scotchbonnet sauce,daves insanity,sriachi,texas petetobasco.my personal preference is the scotch bonnet,and then the daves.the scotch bonnett has 2.5 lbs peppers,some vinegar,mustard and sugar,for 1 gl.

really not that bad,puts a little zip in things but is not the kind of burn that just plain hurts.we use it mostly on salad,i also like to drop a spoonfull in a bowl of rice and beans,but in regards to your comment we only use the seed in half of the peppers.couple weeks ago i seen my neighbor in the back.i had just picked some scotch bonnets,so i went over and give him a couple,explained that they were pretty hot and good for cooking.we have a language barrier between the two of us,and before i could stop him he bit off 2/3 0f it and eat it.made it almost 30 seconds ,head turned red and made a b line for the door.

Yeah, and Maser most likely has DNA similar to ours with a Y chromosome. Nonetheless, the flavor is different. What's your point?

I used to get Susie's out of Antigua, smuggled into the country by a C-141 Pilot. Now you can get it on the internet. Good stuff.

Equally hard to find around here is Yucatan Sunshine. I discovered it in Kalifornica, and bought the entire stock in the store. About 10 bottles. Needles to say, I was impressed. Not too hot, but an excellent flavor.

Dave's Insanity sauce is the hottest stuff I ever had, outside my own concoctions, but Dave's has no flavor. Other people have told me it tastes like shit, but I have never made the comparison....

Yeah, the Son-In-Law Uses Dave's to add the heat to his BBQ sauce.

He's pretty serious about his meats, with a decent size smoker, a turkey fryer, and an old fuel oil tank torched in half and rebuilt into a pair of pig roasters. Somewhere in all of this there may be lurking a part-time catering business. Better times will tell.

I like Frank's. I've never really been a fan of spicy food, I just don't really tolerate the heat that well. I ate a habanero once on a dare, and ever since then I've had no desire to even think "medium" at the Thai places...

While I make no professions to eat spicy stuff, Maser has. Maser, you can at least be man enough to acknowledge you've seen the thread (rather than pretend not to know about the challenge - it's pretty obvious), and that you won't accept Shankster's challenge. Few things lose respect faster than not even having balls enough to admit you don't have balls enough to accept a challenge. Not everything in life will go away if you ignore it, and you can't always edit things after you say them. You'll eventually have to learn to man up, in one form or another, if you ever want to succeed at life.

There is a place in Grand Cayman Islands called Hell. No, I am not kidding. They make a local style hot sauce that is the HOTTEST thing I have ever tried. The lady that sells it asked if I had a heart condition or any stomach problems. I told her back in the day I had a pretty serious ulcer. She would not sell it to me so I had to get my brother to go back after it. I will buy some next time Im there and give it a try again. It was insanely hot. Had a great taste though

You fellas have me curious, especially in regard to the "scotch bonnet" peppers which I have never heard of.

Are any of you growing your own? I am considering starting a garden and peppers would be great along with certain herbs .THe problem is here in Texas prevalent hot n dry conditions will only add to the fire.

Any suggestions on growing these?

Recipes that aren't family secrets would be good too.

My son was with me one day on errands, which included a lunch stop at a Cambodian restaurant in the middle of the 'hood. Being a typical know-everything fourteen-year-old man of the world, he just looked at me like I was some sort of geriatric fool when I told him not to eat the pepper slices that were sitting in a little jar on the table with the rest of the condiments, explaining that they were more for flavoring soups by osmosis than anything else.

Convinced that this was nothing more than a diminutive sliver of "long hot," like he had previously experienced living with his Italian mother, he fished one out like it was a deli pickle, gave me a defiant look, and popped it in his mouth and began chewing.

A second or two later, he was spitting everything back out onto a napkin, his eyes watering and his tongue then waggling back and forth in his open mouth as he tried to breathe cooling air back and forth across the burn. He ate and drank everything on the table that was conceivably cooling, his <span style="font-style: italic">and</span> mine, including all the carbohydrates, guzzled two cans of chilled tamarind nectar, and then an entire quart of milk from a convenience store thereafter we left the restaurant, and still couldn't get the scorching sensation out of his mouth and nose.

"Dad, why didn't you say anything?" I looked at him, and said, "Oh, but I did. I told you not to, and apparently that wasn't enough for you." I then went on to explain that the Cambodians, like other ethnic groups, grew peppers wherever they could find a patch of ground, and only replanted seeds from the hottest bushes of each generation of plants, creating a maniacally hot but innocent-looking little thing that was definitely <span style="font-style: italic">not</span> to be fucked with.

To this day, he still doesn't listen very well, but I've noticed, when we're out and Dad is footing an ethnically Southeast Asian lunch bill, that he quietly pays attention to everything that I do and say, so as to avoid another run-in with unpleasantness. It almost makes me think that he might slowly be learning a thing or two about survival.
