When I lived in Sanford Florida it was still horse and cattle country. Saw many horses and cattle with phone numbers shaved into their coats when a hurricane was close to hitting the area.

My parents got divorced when I was around 20. My dad said that I could have the all the butchered venison that was in the freezer at my mom's house, but I had 1 week to get it out of her house. I couldn't afford a freezer, so I made jerky out of most of it, ended up with about 25 pounds jerked. I learned two things: 1) make sure and trim every single piece of fat off of it, and 2) don't store it in Mason jars. Lasted about 4 or 5 months before the fat started going rancid, but by that time, it was mostly gone.
