Tried cutting out all seeds? They really enhance inflammation if you’re prone to it due to injury. Seeds oils like all of the vegetable oils are the worst culprit.
We use olive and avocado oil for some stuff, lard and coconut for frying now. Zero seed oil and my joint pain went from awful to not bad.
You can do a really strict protocol at first, then introduce some things one at a time to see how you react.
Corn, (most)wheat and peanut is a zero tolerance for me now but I can tolerate sourdough made from organic wheat. I avoid most beans (lectins are high) and “stalk” vegetables. Almost any fruit of a plant is ok for me, especially zucchini and tomatoes/peppers.
It took time to figure out my triggers for inflammation but the results have been great.

Yes, peanut butter counts. Try using butter or tallow instead of olive oil also.No seeds, no vegetable oil. I do occasionally eat peanut butter (does that count)? Fussed atvtge wife for not getting extra virgin olive oil. Nowvthat I think, maybe my back hurts from sleeping on the sofa.

Peanuts and almonds are very high in lectins and peanuts have a mold (yes all peanuts) that is linked to lots of issues, especially inflammation. I used to eat a large jar of crunchy natural Jif every 2 weeks and had incredible joint trouble. No peanut in my life now and sooooo much relief.Yes, peanut butter counts. You have to experiment and add in one thing at a time, gauge your reaction and keep a log.I went through a food inventory a while back after having all kinds of problems which I won't list in entirety here but waking up with night sweats and painful cramps were a couple along with getting up to pee 3 or 4 times a night and a few others that were downright scary.
I cut out pretty much all processed foods for a while then stopped eating wheat, seafood, dairy and beef entirely. Talk about a limited diet. Long story short, everything is back except dairy in any form. No butter, cheese, whey, milk, yada yada ... not a single thing that lists any milk based ingredient or may have been made where dairy might contaminate it. It's not a lactose intolerance it's more like a genuine dairy allergy.
Cramps are gone, sweats are gone, don't get up to pee at all. Still don't sleep much but that's always been a problem so maybe I'll try the magnesium glycinate.
Point being, different people have different triggers.

Dr. Chaffee is famous for saying “vegetables are trying to kill you” and they really are. Anything that is a seed or stalk is typically not something good for your body. Lots of compounds that cause many ailments and reactions. Fruits of plants can be ok but you gotta add in one at a time after a period of abstinence to see how you react.
Green beans if cooked well and with a water change I can do. It is my “exception” to my rules. Nightshades are hit and miss, requiring experimentation. Traditional “fruits” are pretty much all fine. Vegetable “fruits” like squash, zucchini and such are typically fine.
Olive oil has a lot of anti-inflammatory properties so try swallowing a tablespoon morning and night and use it regularly in dishes. It has some polyunsaturated fat (bad) but if a good quality the good outweighs the bad.
Olive oil from Italy is now all suspect and is largely adulterated with seed oils. A California or Spanish oil is best and some South American oil is very very good.

Salt salt salt, a good celtic sea salt will help you in so many ways. Salt isn’t the devil. Good salt with lots of other trace minerals is essential. Stay away from Himalayan pink it has heavy metals.
