As a transplant from Kansas City, I've been exposed to lots of BBQ. Some good, some average, and some extraordinary. I do have a preference for KC style Que. I've had others, and it's all good, I just have a preference. One thing I have learned from moving to ND, the Yankees here have no idea what makes good BBQ.

Here are some pics from a recent weekend.

Getting things ready. I use a commercial rub. I'm experimenting with my own home brew, but haven't come up with anything better.

I use lump charcoal. This is a good amount. I add wood for smoking, and will need to use a bit more charcoal. 10 pounds usually will run this thing for well over 6 hours. I use the slotted spoon for moving around the hot coals.

I smoke all my pork with apple wood. And I prefer baby backs, because I get more consistent results with em, YMMV. After 2 hours on the smoker.

Wrapped in foil for another 2 hours at around 250 degrees.

Back on the smoker for at least another hour after the foil is off, maybe 2 hours depending on how well they are done. I put a light coating of sauce on the ribs for about the last 30 min. Finished product.

What is that meat looks like pigs neck or back, we BBQ this (if i'm correct on meat

) cut to 1" pieces across and marinaded in garlic/mustard/paprika/pepper/curry.

Thats another thing you can't find in ND, a good cigar...I either ordered it on the net or got it on my last trip to Vegas. Visited the Fuente shop at Ceasars. It's a good smoke. I haven't found a Fuente product I don't like!

That smoker is a nice piece of kit too. I have tried several Fuente's and the best so far have been the Casa(medium to light body) and the Opus X(not too bad). I found the FX a little harsh wen compared to the Gurkha Platinum Reserve or the Torano Decadencia, all very smooth cigars though.
The Hemingways though, nice blend and very popular.
A good friend hits Vegas twice yearly(he has been in Iraq, and Korea over the last two years though) and is ready to hit it again soon. I look in my crystal ball and see the future arrival of one Casa Fuente, an Opus X, and one 'oddball' shape that he will pick for kicks so we can compare it's smoning experience.
Never seena TAC-P make MSG so fast either!
