The woman made some pimento cheese this weekend. She used a smoked cheddar and added bacon. Yuuuum! Like Red Robbin!!
Used it on bacon venison cheeseburger this evening. A picture would not do justice to the flavor.
Added to the venison.
Bread crumbs
An egg
Salt and pepper
Garlic
Smoked paprika
Chilli powder.

Not rocket science, the bag has pork jelly salvaged from a smoked pork butt.

The next morning is even better.
Spoon up some beans and meat leave out liquid, mash and fry in a pan and add cooked scrambled egg.
Serve in a tortilla with some jalapeno.

French onion chicken.

If you like French onion soup. This is some kind of good stuff.
The chicken is sprinkled with salt, pepper, garlic powder and thyme then stuffed with onions sauteed in beef broth, garlic and butter until dark brown. Then stuff in mozzarella and parmesan cheese. Close with some toothpicks and brown in the same skillet used for the onions. Place the remaining onion with a splash of broth in baking dish. Bake at 350 for 45 minutes. Serve the chicken topped with the onions from the baking dish.

I think python skin boots and other items made from them should become popular again.

That could help with the problem in Florida.

Kill them, harvest the skin and use the meat to feed alligators, then harvest them by upping sport hunting.

Maybe a reward system ie.
Kill / harvest x number of, or x feet worth of python and recive a gator tag from the game department.

Changfoo fever killing thousands. @pmclaine cooks up some changfoo. The man has no fear.

No dogs, cats or bats were utilized in whipping up my stir fry.

Could use a bigger cast iron but don't know if I can fit it in the cabinet unless I toss some of my wifes shitty teflon pans. Chick buys organic and cooks on chemicals go figure.

Recipie 40 years into the making.

My wife always complained I would not eat grits, 34 years.

Last time I ate grits was in a training base chow hall . Blaaaa

So last nite I made her some shrimp and grits.

They were awsome.

1 cup grits 2 cups chicken broth 1 cup milk and 1 cup water, pinch of pepper and 2 + cups of sharp white cheddar cheese. Cook to package directions and then stir in cheese.

6 strips bacon, pound of shrimp, red pepper flakes, paprika, 3 big garlic cloves, 1 bunch chopped green onions.

Cook bacon first remove and chop.
Cook remaining ingredients in bacon fat and add bacon.

There was enough salt in the cheese and bacon so none was added.

Serve over grits.

I can't lie, the two Cells closest to the Kitchen asked what was for lunch, cuz it smells great. Said I dunno, ain't got time to go and look, but you're right, smells pretty damn good.......

I know a place that holds people temporarily until they can be brought to court.

For a short time that place was supplied with food to feed the short stays from the nearby corrections house.

One of the temp stays recognized the food and where it came from.

He refused to eat that weekend stating "I know what we do to that food".

Sometimes "Karma" calls.

If you put liquid smoke in the sous vide is it like a smoker?

Cooking meat in a hot tub, next thing you know we will be making gin in the bathtub. Oh wait------ ?

I've watched YouTube videos of people using liquid smoke in sous vide and they say it tastes like shit. I usually just use a good seasoning and brown the food in butter.
I am sure I could smoke food only smoker for an hour or two and finish it sous vide.

Was just kidding liquid smoke sucks compared to the real thing.

Those gadgets have a place.

Just not my place.

To old to change things spent many years learning.

No burnt tidbits to nibble at or make gravey, no smell of roasting meat wafting around the place.

I think that would be missed quickly.

It's a different kind of cooking, that's for sure.
It cooks certain things extremely well. I love cooking pork sous vide. Steaks turn out amazing too. Just think of it as reverse searing. Once the meat hits the desired temp, you pull it from the bag and sear it on high heat.

I have started enjoying smaller steaks as well or just plan on steak and eggs for breakfast.

I need to leave a news article about the dangers of teflon innocently on the kitchen counter for her to read.

Some of those pans are all steel All Clads. Those are a good pan. The teflon shit needs to go.

She just hates the weight of the cast iron and truth be told it s a bear buried under other pans.

We need a hanging rack but there just isn't room.

So do a test with the missis.

Cook one fried item in her teflon pan and one in a borrowed cast iron pan.

Be fair, I already know the results but she doesn't yet.

I'm old the cast iron is a pain but results are worth it.

I have cast iron pans well over 50 years old in my house. Use them all the time.
