    I bought a larger smoker its a 20" pipe 48" long with a firebox in the center below, this allows the smoke to come up from the fire box and it hits a removable deflector pan that allows the smoke to be indirect and reverse flow.

    controlling the temp can be a little frustrating unless you have the time and the beer to do it right. I originally looked into a process controller for temprature that would use a "K" thermocouple to sense the temp of the smoker then it would turn on a small computer type fan to blow on the coals when the temp drops below the setpoint say 225 degrees

    I instead of building this myself decided to get one and initial google search the systen with the fan controller thermocouple etc was approx $325.00

    so I decided to build it my self until I came across this controller system that is a direct replacement for what I was going to build using a DC fan system.

    So I have ordered the controller listed above ans made my own connector for the fire box that has 2 of the small 22 cfm blower fans for the supply.

    may want to try this if your looking for a temp control unit . I should have this by the weekend for testing.

    FWIW, when we made our Ceracoat oven, this is where we got our temp controller from. They are VERY helpful, Very economical, and Very good service.

    Our PID controller works perfectly, and is a 10th of the price of anything which we could get locally. I mean "ordered in locally".

    Nobody has it on hand.

    Bill is obviously missing the true beauty of smoking...

    It's all about burning a good cigar, downing beer or bourbon, and killing an afternoon or day doing the two aforementioned actions.

    If temperature remains between 200* and 250* it only makes an hour's difference in time. For example: An 11# pork butt will be finished in 8 hours at 250*. If the fire reaches only 200* and the meat is closer to room temperature before starting, it will only take that same 8 hours but maybe 1 more due to the lower overall temperature. A simple grill thermometer at teh level of the meat is the best indicator, however, technology and inexpense of the little probe digital set up we have seen works as well to guage the meat's tenderness.
    Meat becomes fall off the bone tender at around 195*
    Bread, rolls, biscuits are all done at an internal temperature of 195*
    Fish is flaky, and done at about 140* - 150* depending on thickness

    It is the process of getting that big hunk of meat to 195* that I find relaxing though. It is a slow, easy thing. Today will be a little different, as in between checking teh heat I and No3 will be doing a little light cleaning in anticipation of Panty 6's and No2's arrival back home

    Well not really , I am doing this for a pig roast that will be an all nighter. makes it easier when you pass out during the night !!!!!!!!!!!!!!!

    Well got the forst controller in today and it worked for say 15 minutes, this was enough time to connect the fans and the thermocouple to test it . the controller failer during the heat up .

    I called and there is another on the way ??
    Disappointing but nice people to deal with no questions asked
