Hunting & Fishing Rabbit Recipes?

Hey all,

Do any of you have a good rabbit recipe? I am cooking them in an iron skillet now, but, although the flavor is very good, the meat is a little tough. Dredging in salt/pepper/flour and then cooking in marsala wine gives a great flavor, btw!

First limit of the 2011-12 season and my first limit of handgunned rabbits. Killing Thumper just became a lot of fun again...now I just need improve on his table preparation.

Soak the meat for a day or 2 in milk or water. After that just use your favorite fried chicken recipe. Fry it slow in about an inch or so of oil (or lard) just like chicken. Make a brown gravy out of some of the drippings and smother the rabbit in the gravy and simmer till it's tender. Call me when it's done

do what you're doing now, except after browning on both sides, add water, reduce to a simmer and cover until the water evaporates and they get a good crisp crust. They will be tender.

Marinate in soy sauce and a bit of balsamic vinegar, rosemary and garlic. Sear backstraps and chunked up hind quarters in bacon fat and eat good! These were from last December with the pistol.

Coming form an Italian backround.
My grandfather had a passion for hunting rabbits with beagles & a 20 gauge.
He called them Coniglio
Just let it simmer in that sauce all day. Fall off the bone tender.
